Home Made Mac and Cheese


Homemade Mac & Cheese

3 tbsp butter (not magarine) 1 1/2 cup whole milk
1 cup heavy cream 1 cup flour(or gluten free flour)
1 tsp salt 1 tsp pepper
1 cup flour (or gluten free flour) 1 cup shredded mozzarella
1/2 tsp dry mustard or 1 tsp regular mustard
1/4 lbs Velveeta cheese, Shredded
16 oz elbow macaroni (or gluten free elbow macaroni)
paprika

In a large stock pot boil macaroni according to package directions. Pour into colander and let sit.
In a large saucepan, melt butter over low heat. Stir in flour, salt, mustard and pepper until smooth

Remove from heat. Stir in Milk and cream slowly until smooth. On medium heat stir constantly for 10 minutes until thickened, remove from heat. Stir in 1 1/2 cups shredded cheddar cheese, Velveeta cubes, Mozzarella cheese until melted.

Pour cooked macaroni into greased 9x9 or 9x12 casserole dish. Pour cheese mixture over top and mix together well. Sprinkle with pepper and left over shredded cheddar cheese and top with paprika (sprinkle over entire top of mixture)

Bake in a 375 oven for 30 mins, then turn up to 425 for 10 minutes (if not brown and bubbly on top turn on broiler for 3-5 minutes.).
